Will steel dull my knives?

Steel is a harder surface than end-grain wood, so your edge will need honing a bit more often — a few strokes on a honing rod you likely already own. What you get back: a board that never harbors bacteria in knife grooves and never sheds plastic into your food. Many owners prep on it daily; if you baby delicate Japanese blades, use it for everything else and keep your board obsession too.

Can I use it on my electric or glass-top stove?

No — don't use it on electric stovetops. As a griddle it's made for live flame: gas stoves, charcoal grills, Big Green Egg, propane, ethanol burners, and campfires.

Is it dishwasher-safe?

Yes. It's solid, non-porous 304 stainless — the same material as commercial kitchen counters. Dishwasher, sanitizer, scouring pad: nothing bothers it.

Will it slide around on the counter?
